     I had left my last career as a corporate hospitality/restaurant manager eight years ago to be able to spend more time with my new family. As much as I had loved the type of job, it really started to drain my physical and emotional energy. I had envisioned better health and more energy once I was able to spend more time at home, and found myself continually feeling worse as time passed.

     Four years ago I was finally diagnosed with Celiac Disease, as well as Lyme Disease, which made for a tricky recovery regimen. Nothing short of a complete transformation of diet and lifestyle was necessary to help myself return to feeling alive and capable of handling day-to-day life. When I was told of the gluten allergy, it was literally just that. No other information about the disease was offered.  I assumed that after eliminating this protein, I would feel great, but that wasn’t the case for quite awhile. I didn’t know at the time that there were decades of inflammatory damage that occurred, which needed extra support to truly heal.

     During the last four years I have worked hard to educate myself further about nutrition, supplementation, Celiac Disease and Gluten Intolerance recovery, Lyme Disease and Lyme Co-infections. During my learning and healing process, I have had the privilege of speaking with many people who have had similar events occur in their lives. Since training to become a Certified Gluten Practitioner, it was shocking to me how many people have gluten intolerance and Celiac Disease, and how often it is not diagnosed until years later because the symptoms may not include detectible gastro-intestinal issues.

     I have now left my four year job as a supplement buyer at a local health food store to start my own business in Florida, where my family and I live. Upon looking for an office space to use for Nutritional Counseling, I found the perfect location was a much larger space than I originally planned. The idea of Down 2 Earth was born! We will have a small dedicated gluten-free kitchen, a consultation room, raw juice bar, ice-free smoothies, gluten-free sandwiches and salads, high-quality supplements, sports nutrition, protein powders, and natural skincare.  We are also on facebook.
